2004 -Chili Daddy Salsa

Tom Calvert’s Chili Daddy Salsa earned him the Champion title in 2004, but he’s cooked competitive chili since 1986! His win didn’t come as a surprise really- as he was also a Hat Trick winner! That means he was qualified to cook at the 2004 WCCC in all three ICS categories - Traditional Red Chili, Chili Verde and Salsa. Hats off to Tom!

Ingredients

4-5 cups diced tomatoes
1 cup diced red onion
1/4 cup diced white onion
2 Tbsp. minced garlic
1 green bell pepper diced
1/2 of each of the following bell peppers: (diced)
Red, Yellow, Gold and Orange
4-5 jalapeno peppers diced
2 Tbsp. cilantro chopped
Juice from 1/2 of each fresh lime, fresh lemon
1/2 tsp. black pepper
1/2 tsp. celery salt
1-2 8 oz. cans tomato sauce (optional)

Instructions

Combine all ingredients.

Add salt to taste.

Adding the tomato sauce tightens the consistency.
