Maud Swick of Bakersfield, California is the 1999 World's Chili Champion, and is also $25,000 and one Bronze World's Champion Chili Pot richer.

Maud, representing the Sespe Creek Regional Championship won the competition of 123 chili cooks qualifying from around the world. She also qualified and respresented the State of Nevada in the 1st World's Chili Verde Championship as well as qualifying and entering the 5th World's Salsa Championship. A very busy lady during the Championship weekend.

Maud and her husband George (who qualified for Salsa Championship) joined the ICS at the 1984 World's Championship where they were a part of Darrell Beller's Chili Team, placing 4th in the world at that time. Fifteen years later she was on her own and took the title!

  1999 North, South, East & West.....cooks descended on Las Vegas and took no prisoners at the World's Championship Chili Cookoff. Maud Swick, from Bakersville, California walked away with 1st place, the coveted bronze chili pot and a check for $25,000. Her Zanjero Red Chili will go down in history as the best bowl of chili for 1999!
   
  Winning Recipe
   
  Zanjero Red Chili

Ingredients:
3 lbs Course Ground or Cubed Beef Roast
1 cup Onion
5 Pods Garlic
2 Ortega Chili Peppers
1 can Chicken Broth
1 can Beef Broth
1 can Tomato Sauce
10 Tbsp Chili Powder
1˝ Tbsp Cumin
1 Tbsp Hot New Mexico Chili Powder
Instructions:
Sautee meat & onions in 1 tsp Wesson oil
Add to the chicken broth
Simmer 1 hour
Add:
1 can tomato sauce
Chili peppers
chili powders and cumin
Simmer 1 hour and Salt to tast
