Description
Collier County Parks and Recreation will supply each competitor with temporary access to a water source and a 12’ x 12’ space. Collier County Parks and Recreations will not supply electricity, cooking equipment, cooking ingredients or other support equipment. Each competitor must abide by Collier County and ICS rules and regulations. All competitors must cook under a tent, canopy, umbrella or other covering to protect the food from the open air. Also, each competitor must have a fire extinguisher.
Due to State cooking regulations, competitors must operate from a flame retardant canopy, tent or trailer.
Please note that the State of Florida’s Department of Business and professional regulations – Division of Hotels and Restaurants has the right under state codes to check all areas for proper food handling, preparation and making sure everything is to code. You will not be charged a licensing fee but you will need to certain your area meets code (place to wash hands, proper food

General Cookoff Information
Set up starts at 9:00 A.M., Saturday, March 28, 2009. Cooks meeting will be held at 12:30 P.M. Chopping is from 1:00 P.M. to 2:00 P.M. Stoves can be lit and cooking will start at 2:00 P.M. until 5:00 P.M. Judging will start at 5:00 P.M. Awards will be announced at approximately 6:00 – 6:30 P.M.
Turn in times are as follows: Salsa at 2:30 PM. Chili Verde at 3:30 PM and Red Chili at 5:00 PM

Additional Information
Venue Comments: Chili teams will be automatically enrolled in the SHOWMANSHIP award. This award will be given to the best-decorated chili cook-off area. No theme has been enlisted for this year's event. Use your imagination.
